Pan Seared Pork Chops

Serves:

4-6 people

Ingredients

  • 2 pork tenderloins about 1 pound each

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon chili powder

  • 1-2 teaspoons of fresh thyme finely chopped 

  • 1 teaspoon salt

  • 1/4 teaspoon pepper or to taste

  • 4 tbsp avocado oil 

  • Cast Iron skill preferred but you can use any other type of skillet


Sauce Ingredients

  • 4 tbsp brown mustard

  • 2 tbsp honey 

  • ½ tsp cinnamon

Steps

Preheat your oven to 400F and move the rack to the middle position.


Pat the tenderloins dry with paper towel.


Add the spice rub ingredients (smoked paprika, garlic powder, onion powder, chili powder, fresh thyme,  salt & pepper) to a small bowl and stir together. Coat the tenderloins all over with the spice rub.


Place skillet on medium/high heat, add the avocado oil and place the pork tenderloin into skillet.  

Sear each side of the chops for 1-2 minutes each. 


Bake, uncovered, for about 20 minutes or until the pork has reached 145F. Let it rest 10 minutes before slicing it into medallions so it remains juicy.


Pour the pan juices over the pork.
