Avocado Salad Dressing (dairy free)

Serves:

  • 1 ripe avocado

  • 1 clove garlic, minced

  • 2 tablespoons fresh lime or lemon juice

  • 2 tablespoons olive oil

  • 2 tablespoons water (add more to thin as needed)

  • 1 tablespoon apple cider vinegar or white wine vinegar

  • ½ teaspoon sea salt (adjust to taste)

  • ¼ teaspoon black pepper

  • 1 tablespoon tahini (for extra creaminess and a nutty flavor)

  • A handful of fresh cilantro or parsley

  • Pinch of cumin or red pepper flakes for extra flavor

Steps

  1. In a blender or food processor, combine all ingredients.

  2. Blend until smooth and creamy, adding more water 1 tablespoon at a time to reach your desired consistency.

  3. Taste and adjust salt, citrus, or spice levels as needed.

  4. Drizzle over with your favorite mixed greens and some seasonal vegetables and you've got a flavor packed salad to enjoy.
