Ingredients
1 pound of mahi mahi
2 tablespoons of blackening seasoning
3 tablespoons of avocado oil
1 small mango
1 cup of cherry tomatoes, quartered
1 tablespoon of lime juice
2 teaspoons of finely chopped cilantro
Handful of microgreens
1 tablespoon of chopped red onion
1/2 avocado, cubed
1/2 cubed cucumber
1/4 jalapeno minced (with or without seeds depending on spice level)
1 teaspoon sea salt
½ teaspoon of black pepper
2 tablespoons of extra virgin olive oil
Steps
In a bowl, combine the prepared mango, tomatoes, cilantro onion, avocado, cucumber and jalapeno. Add in the lime juice, salt and pepper. Toss in micro greens.
Put blackening seasoning on a plate and dip filets in seasoning
Heat iron skillet or non stick pan on high heat for about 3 minutes, until its smoking
Turn down heat to medium, add olive oil and add seasoned fillets
Sear until golden on each side (about 3 minutes per side), turn down heat to low and finish cooking (about 2 minutes)
Lay salsa below or on top of the fish and enjoy.
