Blackened Mahi Mahi

Serves:

4 people

Ingredients

  • 1 pound of mahi mahi 

  • 2 tablespoons of blackening seasoning

  • 3 tablespoons of avocado oil

  • 1 small mango

  • 1 cup of cherry tomatoes, quartered

  • 1 tablespoon of lime juice

  • 2 teaspoons of finely chopped cilantro

  • Handful of microgreens

  • 1 tablespoon of chopped red onion

  • 1/2 avocado, cubed

  • 1/2 cubed cucumber

  • 1/4 jalapeno minced (with or without seeds depending on spice level)

  • 1 teaspoon sea salt

  • ½ teaspoon of black pepper

  • 2 tablespoons of extra virgin olive oil

Steps

  1. In a bowl, combine the prepared mango, tomatoes, cilantro onion, avocado, cucumber and jalapeno. Add in the lime juice, salt and pepper. Toss in micro greens. 

  2. Put blackening seasoning on a plate and dip filets in seasoning

  3. Heat iron skillet or non stick pan on high heat for about 3 minutes, until its smoking

  4. Turn down heat to medium, add olive oil and add seasoned fillets

  5. Sear until golden on each side (about 3 minutes per side), turn down heat to low and finish cooking (about 2 minutes)

  6. Lay salsa below or on top of the fish and enjoy.
