Ginger Bread Loaf

Serves:

¼ cup molasses

¼ cup maple syrup (or honey)

1 cup unsweetened applesauce

1 egg

¼ cup melted coconut oil (or olive/avocado oil)

½ cup almond milk (or any milk)

2 cups whole wheat flour (or regular flour if easier)

1 tsp baking powder + 1 tsp baking sod

  • Spices:

    • 1 tbsp ground ginger

    • 2 tsp ground cinnamon

    • ½ tsp nutmeg and ¼ tsp cloves

Steps

  1. Preheat oven to 350 °F (about 175 °C) and grease an 8×4-inch loaf pan.

  2. In a large bowl, whisk together the molasses, maple syrup (or honey), applesauce, egg, oil, and almond milk until smooth.

  3. Add the flour, baking powder, baking soda, and spices. Stir until just combined — don’t overmix.

  4. Pour the batter into the prepared loaf pan.

  5. Bake for about 40–45 minutes, or until a toothpick inserted into the center comes out clean.

  6. Let it cool for ~30 minutes in the pan, then transfer to a rack to cool more before slicing.
