Herby Veggie Omelet

Serves:

1 omelet

Ingredients

  • 3 organic eggs

  • 1 cup of spinach

  • 1 ½ teaspoons of chives

  • ¼ cup parsley

  • Slab of grass fed butter

  • ½ an avocado

  • Salt and pepper for seasoning

Steps

  1. Melt the butter in a small saute nonstick pan.

  2. Add raw spinach to the pan and cook until wilted.

  3. Crack the 3 eggs and whisk until fluffy.

  4. Add the eggs mixture to the pan with spinach.

  5. Add the herbs and salt and pepper as the eggs begin to cook.

  6. Gently move around the mixture so the eggs become fully cooked and form an even circle.  

  7. Flip half the circle so it forms a folded semi circle

  8. Serve with a side sliced avocado for healthy fat and enjoy.
