Orzo, Veggie, Feta Salad

Serves:

4 people

Ingredients

  • Cook and cool a box of Orzo

  • 12 Cherry Tomatoes (cut in half)

  • 1 10-12” Italian Cucumber (cut into small cubes)

  • 1 Cup of Feta Cheese (more if preferred)

  • ½ Cup of Diced Red Onion

  • 2 chick thighs grilled and chopped (optional)

  • ¼ cup basil chopped

  • 1 red pepper chopped

  • Extra Virgin olive oil for drizzling

Steps

Mix all ingredients together, drizzle with oil and cool in fridge for 1-2 hours and serve.
