Ingredients
Cook and cool a box of Orzo
12 Cherry Tomatoes (cut in half)
1 10-12” Italian Cucumber (cut into small cubes)
1 Cup of Feta Cheese (more if preferred)
½ Cup of Diced Red Onion
2 chick thighs grilled and chopped (optional)
¼ cup basil chopped
1 red pepper chopped
Extra Virgin olive oil for drizzling
Steps
Mix all ingredients together, drizzle with oil and cool in fridge for 1-2 hours and serve.
