Ranch Chopped Salad

Serves:

6-8 People

Ingredients

Dressing Ingredients:

  • ½ cup greek full fat yogurt

  • ½ cup mayonnaise

  • 2 tablespoons apple cider vinegar

  • 1 teaspoon onion powder

  • 1 teaspoons dill (fresh or dried)

  • 1 teaspoon parsley (fresh or dried)

  • 1 teaspoon chives

  • 1 teaspoon sea salt

  • 1 teaspoon black pepper


Salad Ingredients:

  • 1 can chickpeas drained and rinsed

  • 1 pound of mixed greens

  • 1 ½ pound romaine

  • 1 cup cherry tomatoes (cut in half)

  • 1 cup cucumbers chopped

  • 2 ripe avocados peeled, pitted, chopped

  • 2 green onions with the whites sliced thin (discard green and roots)

  • 2 large carrots, peeled and sliced thin

Steps

Dressing Instructions:

  1. In medium bowl, combine the yogurt, mayonnaise, vinegar, onion powder, herbs, salt and pepper

  2. Whisk until all ingredients are incorporated

  3. Refrigerate until ready to serve.


Salad Instructions:

  1. In an extra large bowl, combine the romaine and mixed greens.

  2. Add in the chickpeas, tomatoes, cucumbers, avocados, green onions and carrots.

  3. Drizzle in the dressing and serve.
