Ingredients
Dressing Ingredients:
½ cup greek full fat yogurt
½ cup mayonnaise
2 tablespoons apple cider vinegar
1 teaspoon onion powder
1 teaspoons dill (fresh or dried)
1 teaspoon parsley (fresh or dried)
1 teaspoon chives
1 teaspoon sea salt
1 teaspoon black pepper
Salad Ingredients:
1 can chickpeas drained and rinsed
1 pound of mixed greens
1 ½ pound romaine
1 cup cherry tomatoes (cut in half)
1 cup cucumbers chopped
2 ripe avocados peeled, pitted, chopped
2 green onions with the whites sliced thin (discard green and roots)
2 large carrots, peeled and sliced thin
Steps
Dressing Instructions:
In medium bowl, combine the yogurt, mayonnaise, vinegar, onion powder, herbs, salt and pepper
Whisk until all ingredients are incorporated
Refrigerate until ready to serve.
Salad Instructions:
In an extra large bowl, combine the romaine and mixed greens.
Add in the chickpeas, tomatoes, cucumbers, avocados, green onions and carrots.
Drizzle in the dressing and serve.
