Strawberry Bruschetta

Ingredients

  • 2 cups finely sliced strawberries

  • 2 tablespoons finely chopped fresh mint

  • 1 teaspoon extra virgin olive oil

  • 2-3 teaspoons sea salt

  • 1 long baguette sliced thinly

  • 1 lemon, zested

  • 1 1/2 cup ricotta cheese

  • 2 teaspoons balsamic vinegar

  • 2 tablespoons Mike’s Hot Honey

Steps

  • Place sliced bread on baking sheet and bake until crisp. Drizzle with 1/2 tsp oLIVE oil and salt

  • In a small bowl, toss the strawberries, mint, remaining olive oil, teaspoon of salt and drizzle of balsamic vinegar

  • Stir lemon zest and hot honey into the ricotta

  • Spread ricotta on each slice of bread and top with 4-5 slices of the strawberry mix.

  • Sprinkle with sea salt and serve
